Method

Brownie Layer

  1. 1

    Prepare the Brownie Batter

Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan or line it with parchment paper. In a large bowl, melt the unsalted butter. Once melted, mix in the granulated sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.

  2. 2

    Combine Dry Ingredients

In a separate bowl, sift together the all-purpose flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.

  3. 3

    Bake the Brownies

Pour the brownie batter into the prepared springform pan and spread it out evenly. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

Cheesecake Layer

  1. 4

    Prepare the Cheesecake Batter

In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar and mix until well combined. Add the sour cream and vanilla extract, mixing until smooth. Finally, beat in the eggs one at a time, mixing just until incorporated.

  2. 5

    Add Chocolate Chips

Gently fold in the chocolate chips into the cheesecake batter.

  3. 6

    Layer the Cheesecake

Pour the cheesecake batter over the baked brownie layer in the springform pan. Smooth the top with a spatula.

  4. 7

    Bake the Cheesecake

Bake the cheesecake in the oven for about 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

Topping

  1. 8

    Prepare the Topping

Once the cheesecake has cooled, remove it from the oven and refrigerate for at least 4 hours or overnight. Before serving, top with whipped cream and chocolate shavings.
