Chicken Preparation

Poaching the Chicken
In a large pot, add enough water to cover the chicken breasts. Season with salt and pepper. Bring to a boil, then reduce to a simmer and add the chicken breasts.

Cooking the Chicken
Cover and poach the chicken for about 15-20 minutes, or until the chicken is cooked through and no longer pink in the center. Remove from pot and let cool.

Shredding the Chicken
Once the chicken is cool enough to handle, shred it using two forks and set aside.
Chimichurri Sauce Preparation

Mixing the Sauce
In a medium bowl, combine the chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt.

Stirring the Sauce
Whisk all the ingredients together until well combined. Taste and adjust seasoning if necessary.
Crostini Preparation

Preparing the Bread
Preheat your oven to 400°F (200°C). Slice the Batard bread into 1/2-inch thick slices.

Toasting the Bread
Brush both sides of the bread slices with olive oil. Place on a baking sheet and toast in the oven for about 5-7 minutes or until golden brown.

Assembling the Crostini
On each toasted slice of bread, layer a generous amount of shredded chicken and drizzle with chimichurri sauce.
