Method

Preparing the Chicken

  1. 1

    Pound the Chicken

Using a meat mallet, pound the chicken breasts to an even thickness of about 1/2 inch.

  2. 2

    Season the Chicken

Sprinkle both sides of the chicken breasts with salt and black pepper.

  3. 3

    Prepare the Breading Station

Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese.

  4. 4

    Bread the Chicken

Dredge each chicken breast in flour, shaking off the excess, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing the breadcrumbs onto the chicken.

Making the Sauce

  1. 5

    Sauté the Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  2. 6

    Add Tomatoes and Seasonings

Pour in the canned crushed tomatoes, oregano, basil, sugar, salt, and black pepper. Stir to combine.

  3. 7

    Simmer the Sauce

Bring the sauce to a simmer and cook for about 15-20 minutes, stirring occasionally.

Cooking the Chicken

  1. 8

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 9

    Fry the Chicken

In a large skillet, heat oil over medium-high heat. Fry the breaded chicken breasts for about 4-5 minutes on each side until golden brown.

  3. 10

    Assemble the Dish

Place the fried chicken in a baking dish. Pour the sauce over the chicken and top with mozzarella cheese.

  4. 11

    Bake

Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.

Serving

  1. 12

    Garnish and Serve

Remove from oven, garnish with fresh basil leaves, and serve hot with pasta or a side salad.
