Cook the Rice
Rinse 1 cup of white rice in cold water until the water runs clear. In a saucepan, combine the rice and 2 cups of water. Bring to a boil, then reduce to low heat, cover, and simmer for 18-20 minutes or until the water is absorbed.

Add Garlic
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Brown the Chicken
Add the chicken thighs to the pot, season with salt, black pepper, and Cajun seasoning. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned on all sides.

Add Sausage and Okra
Add the sliced smoked sausage and okra to the pot, stirring to combine.

Add Tomatoes and Broth
Pour in the canned diced tomatoes (with juice) and the chicken broth. Add the bay leaves. Stir well and bring to a boil.

Simmer the Gumbo
Reduce the heat to low, cover, and let simmer for 30-40 minutes, stirring occasionally. The chicken should be cooked through and tender.
