Catfish

    Prepare the Catfish

    In a large bowl, combine the cornmeal, flour, cayenne pepper, salt, and black pepper. In another bowl, whisk the eggs and buttermilk together.

    Coat the Catfish

    Dip each catfish fillet into the buttermilk mixture, then dredge it in the cornmeal mixture, ensuring it is evenly coated.

    Fry the Catfish

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated catfish fillets. Fry for 4-5 minutes on each side until golden brown. Remove and drain on paper towels.

French Fries

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Add the potato strips in batches, frying for about 4-6 minutes or until golden and crisp. Remove and drain on paper towels, then sprinkle with salt.

Corn Fritters

    Make the Batter

    In a bowl, combine corn kernels, flour, egg, baking powder, milk, and salt until smooth.

    Fry the Fritters

    Heat vegetable oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil and fry for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

Garlic Toast

    In a small bowl, mix softened butter, garlic powder, and chopped parsley.

    Toast the Bread

    Slice the French bread in half lengthwise. Spread the garlic butter mixture evenly on both halves. Place under the broiler for 2-3 minutes or until golden brown.

    Pour the cocktail sauce and tartar sauce into small bowls for dipping.
