Method

Base Ice Cream Preparation

  1. 1

    Mix the Base Ingredients

In a large bowl, whisk together the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt until the sugar is dissolved.

  2. 2

    Chill the Mixture

Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

  3. 3

    Churn the Ice Cream

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Caramel Sauce Preparation

  1. 4

    Make the Caramel

In a medium saucepan over medium heat, combine the granulated sugar and cook until it melts and turns a golden brown color, stirring occasionally.

  2. 5

    Add Butter and Cream

Once the sugar is melted, carefully add the unsalted butter and stir until melted. Slowly add the heavy cream while stirring continuously until smooth.

  3. 6

    Add Vanilla and Salt

Remove from heat and stir in the vanilla extract and salt. Let the caramel cool to room temperature.

Pecan Preparation

  1. 7

    Toast the Pecans

In a skillet over medium heat, melt the butter. Add the chopped pecans, brown sugar, and cinnamon, stirring frequently until the pecans are toasted and caramelized, about 5-7 minutes.

  2. 8

    Cool the Pecans

Remove from heat and spread the pecans on a parchment-lined baking sheet to cool.

Combine and Freeze

  1. 9

Mix Ice Cream with Caramel and Pecans

Once the ice cream has churned, swirl in the cooled caramel sauce and toasted pecans until evenly distributed.

  2. 10

    Freeze the Ice Cream

Transfer the mixture to a pint-sized container and freeze for at least 4 hours, or until firm.
