1. Prepare the Vegetables
Dice the bell peppers and onion into small, even pieces. Slice the green onions and set them aside.
2. Whisk the Egg Mixture
In a large mixing bowl, crack the eggs and whisk them together with the milk, Cajun seasoning, salt, and black pepper until well combined.

3. Cook the Vegetables
In a large skillet or frying pan, melt the butter over medium heat. Add the diced bell peppers and onion, and sauté for about 5-7 minutes until they are softened and fragrant.
4. Add the Egg Mixture
Pour the egg mixture into the skillet with the sautéed vegetables. Allow the eggs to set for a few seconds before gently stirring with a spatula.
5. Scramble the Eggs
Continue to gently stir the eggs, scraping the bottom of the skillet to prevent sticking. Cook until the eggs are just set but still creamy, about 5-8 minutes.
6. Finish with Green Onions
Once the eggs are cooked to your desired consistency, remove the skillet from heat and fold in the sliced green onions. Adjust seasoning if necessary.
