Prep the Ingredients
Chop the onion, green bell pepper, celery, and garlic. Slice the okra and chop the green onions and parsley. Cut the chicken thighs into bite-sized pieces.

Brown the Sausage
In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside.

Cook the Chicken
In the same pot, add another tablespoon of olive oil if necessary, then add the chicken thighs. Cook until browned on all sides, about 5-7 minutes. Remove and set aside with the sausage.

Combine Ingredients
Return the sausage and chicken to the pot. Stir in the sliced okra, diced tomatoes (with their juices), chicken broth, Cajun seasoning, bay leaves, salt, black pepper, and cayenne pepper.

Simmer the Gumbo
Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 30-45 minutes, stirring occasionally.

Add Shrimp and Finish
About 5 minutes before serving, add the shrimp to the pot. Cook until the shrimp are pink and opaque. Remove bay leaves before serving.

Garnish with chopped green onions and parsley. Serve the gumbo hot over rice if desired.
