Preparation

    Prepare the Shrimp

    Peel and devein the jumbo shrimp, leaving the tails on. Rinse them under cold water and pat dry with paper towels.

    Season the Shrimp

    In a large bowl, combine the Cajun seasoning, salt, and black pepper. Add the shrimp and toss to coat evenly.

    Set up Breading Station

    In three separate bowls, place the flour, beaten eggs, and breadcrumbs mixed with cornstarch. Dredge each shrimp in flour, dip in eggs, and then coat with the breadcrumb mixture.

Frying

    Heat the Oil

    In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully add the breaded shrimp to the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.

    Drain the Shrimp

    Use a slotted spoon to remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.

Serving

    Serve with Sauces

    Arrange the crispy butterfly shrimp on a serving platter. Serve immediately with Cajun Firecracker sauce and sweet chili sauce for dipping.
