    Cook the Bacon

    In a large skillet, cook the chopped bacon over medium heat until crispy. Remove from pan and place on paper towels to drain excess fat. Set aside.

    Sauté the Vegetables

    In the same skillet, add olive oil and heat over medium heat. Add the diced onion and cook until translucent (about 5 minutes). Add the minced garlic and cook for another minute.

    Cook the Broccoli

    Add the broccoli florets to the skillet with the onions and garlic. Sauté for about 5 minutes, just until the broccoli is bright green.

Soup Making

    Add Liquid

    Pour in the milk and heavy cream, stirring to combine. Bring to a gentle simmer and let cook for about 10 minutes, until the broccoli is tender.

    Blend the Soup

    Using an immersion blender or a regular blender, carefully blend the soup until smooth. You may need to do this in batches if using a regular blender.

    Add the Brie

    Return the blended soup to the pot and add the chopped Brie cheese. Stir until the cheese is melted and fully incorporated into the soup.

Final Touches

    Taste the soup and season with salt and black pepper as desired. Stir in the chopped chives, reserving some for garnish.
