    In a medium saucepan, melt 1 cup of unsalted butter over medium heat. Add the finely chopped shallots and sauté until they are translucent and softened, about 5-7 minutes.

    Pour in 2 cups of red wine, scraping the bottom of the pan to deglaze and incorporate the shallots into the wine. Bring the mixture to a simmer and let it reduce by half, which should take about 10-15 minutes.

    Once the wine has reduced, add 2 cups of beef stock, the fresh thyme sprigs, and bay leaves. Bring the mixture back to a simmer.

    Allow the sauce to reduce further for about 20-30 minutes, or until it thickens to your desired consistency.

    Remove the thyme sprigs and bay leaves from the sauce. Season with salt and freshly ground black pepper to taste.
