    Marinate the Catfish

    In a shallow dish, combine the olive oil, lemon juice, salt, and black pepper. Add the catfish fillets and coat them well on both sides. Cover and let them marinate in the refrigerator for at least 30 minutes.

Blackening Spice Mix

    In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, dried thyme, and dried oregano until well combined.

Cooking the Catfish

    Heat the Skillet

    Preheat a cast-iron skillet over medium-high heat until very hot, about 5 minutes.

    Remove the catfish from the marinade and shake off excess liquid. Generously coat both sides of each fillet with the prepared spice mix.
