    In a large bowl, combine buttermilk and hot sauce. Add the chicken pieces and ensure they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

    In a separate bowl, whisk together all-purpose flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well combined. Set aside.

Frying

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Coat the Chicken

    Remove marinated chicken from the refrigerator. Dredge each piece in the spice mix, ensuring an even coating. Shake off any excess flour.

    Fry the Chicken

    Carefully place the coated chicken pieces into the hot oil in batches. Fry for 12-15 minutes or until golden brown and the internal temperature reaches 165°F (75°C).

    Using tongs, remove the fried chicken pieces and place them on a paper towel-lined plate to drain excess oil. Allow to cool slightly before serving.
