Cut and Shape the Shells
Using a sharp knife, cut the stacked phyllo sheets into squares large enough to fit into your mini muffin tin. Gently press each square into the muffin tin to form a shell.
Preparing the Filling

Prepare the Cheese and Craisins
In a mixing bowl, combine the brie cheese (cut into small chunks), craisins, honey, and chopped rosemary. If using sausage, add the crumbled sausage to the mixture and stir until well combined.
Assembly and Baking

Fill the Phyllo Shells
Spoon the cheese and craisin mixture into each phyllo shell, filling them generously.

Bake the Shells
Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the phyllo is golden brown and crispy.
