Tamales Preparation Directions

Prepare the Corn Husks
Soak the corn husks in warm water for about 30 minutes until they are pliable.

Make the Masa Dough
In a large mixing bowl, combine masa harina, baking powder, and salt. In another bowl, cream the vegetable shortening until fluffy. Gradually add the masa mixture and vegetable broth, mixing until you have a smooth dough.

Assemble the Tamales
Take a soaked corn husk and spread about 1/4 cup of masa dough onto the center of the husk. Add a few tablespoons of filling on top of the masa. Fold the sides of the husk inwards and roll the tamale tightly from the bottom to the top.

Steam the Tamales
Place the tamales upright in a steamer pot. Cover with a wet cloth and steam for about 1 to 1.5 hours, or until the masa pulls away from the husk easily.

Cook the Rice and Beans
While the tamales are steaming, prepare rice and beans according to package instructions.

Serve
Once the tamales are ready, serve them topped with red or green salsa alongside the rice and beans.
