    Prepare the Birria

    In a large pot, add the chuck roast, water, dried chilies, garlic, cumin, oregano, bay leaves, salt, and black pepper. Bring to a boil, then reduce to a simmer and cook for 2-3 hours until the meat is tender.

    Shred the Meat

    Remove the meat from the pot and shred it using two forks. Strain the broth and reserve it for serving.

    Assemble the Tacos

    Warm the corn tortillas on a skillet. Place some shredded beef on each tortilla, top with shredded cheese, sour cream, chopped onions, and cilantro.

    Serve

    Serve the tacos with a side of the reserved broth for dipping.
