Prepare the Potatoes
Wash and peel the potatoes. Slice them thinly using a mandolin or a sharp knife to ensure even thickness.

Soak the Slices
Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Slices
Drain the potato slices and pat them dry using paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Chips
Carefully add the potato slices to the hot oil in small batches. Fry until golden brown and crispy, about 3-5 minutes.

Drain and Season
Remove the chips from the oil using a slotted spoon and place them on paper towels to drain excess oil. While still hot, sprinkle with salt, paprika, garlic powder, and black pepper.
