Assemble the Enchiladas
Preheat your oven to 375°F (190°C). Take a corn tortilla, dip it in the green enchilada sauce, then fill it with the chicken mixture. Roll it up and place it seam-side down in a baking dish. Repeat this step until all tortillas are filled.

Add Sauce and Cheese
Once all tortillas are in the baking dish, pour the remaining green enchilada sauce over the top. Sprinkle crumbled queso fresco evenly over the sauce.

Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly.

Serve
Remove from the oven and let cool for a few minutes. Serve hot, topped with sour cream, chopped cilantro, and additional diced onions. Serve alongside black beans and Mexican rice.
