Making the Churros

    Prepare the Dough

    In a medium saucepan, combine water, sugar, butter, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in the flour until a dough forms. Let it cool for a few minutes.

    Add Eggs and Vanilla

    Once the dough has cooled slightly, beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until the mixture is smooth.

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Pipe the Dough

    Transfer the dough to a piping bag fitted with a star tip. Pipe 4-5 inch long strips of dough into the hot oil, cutting with scissors to release them.

    Fry the Churros

    Fry the churros in batches until golden brown, about 2-3 minutes per side. Remove from the oil and drain on paper towels.

    Coat in Cinnamon Sugar

    In a shallow bowl, mix granulated sugar with cinnamon. Roll the hot churros in the mixture to coat evenly.
