Prepare the Filling
In a mixing bowl, combine the shredded beef, refried beans, and cheddar cheese. Mix well until all ingredients are evenly distributed.

Assemble the Chimichangas
Place a large flour tortilla on a flat surface. Spoon half of the filling mixture onto the center of the tortilla. Fold in the sides and then roll it up tightly. Repeat with the second tortilla.

Fry the Chimichangas
In a large skillet, heat the oil over medium-high heat. Once the oil is hot, carefully place the chimichangas seam-side down into the skillet. Fry until golden brown and crispy on all sides, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the chimichangas hot with a side of rice, beans, pico de gallo, and spicy cheese dip.
