Prepare the Pork
Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano.

Sear the Meat
In a large pot or Dutch oven over medium-high heat, add a little oil and sear the pork chunks until browned on all sides.

Add Remaining Ingredients
Add the minced garlic, orange juice, lime juice, bay leaves, and water to the pot. Stir well to combine.

Cook the Carnitas
Bring to a simmer, then cover and reduce the heat to low. Cook for approximately 2-3 hours until the pork is tender and easily shredded.

Crisp the Carnitas (Optional)
For crispy carnitas, spread the shredded pork on a baking sheet and broil in the oven for 5-10 minutes until the edges are crispy.
