    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into fries (about 1/4 inch thick) and soak in cold water for 30 minutes to remove excess starch. Drain and pat dry.

    Cook the Carne Asada

    Season the carne asada with salt and black pepper. Grill or pan-sear the steak over medium-high heat for about 5-7 minutes on each side for medium-rare. Let rest for 5 minutes, then chop into small pieces.

    Fry the Potatoes

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels. Season with salt.

    Assemble the Dish

    On a large platter, layer the fries, refried beans, chopped carne asada, and Monterey Jack cheese. Drizzle with cheese dip, guacamole salsa, and top with sour cream and pico de gallo.
