Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

    Cover the dough with a damp cloth and let it rest for 30 minutes at room temperature.

    Prepare the Filling

    In another bowl, mix the ricotta cheese, chopped spinach, shredded mozzarella, grated Parmesan, nutmeg, and black pepper until well combined. Set aside.

    Cook the Sauce

    In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the crushed tomatoes, basil, and sugar. Simmer for about 15 minutes, stirring occasionally. Season with salt and pepper to taste.

Assembly and Cooking

    Roll Out the Dough

    After resting, divide the dough into two equal pieces. Roll out each piece on a floured surface to a thickness of about 1/8 inch.

    Place one rolled-out dough on a baking sheet. Spread half of the filling evenly over the dough. Top with half of the sauce. Place the second rolled-out dough on top and gently press the edges to seal.

    Preheat the oven to 375°F (190°C). Bake the assembled Rosarita for 25-30 minutes or until the top is golden brown.
