Method

Base Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix Dry Ingredients

In a medium bowl, whisk together granulated sugar, all-purpose flour, baking powder, and salt until well combined.

  3. 3

    Cream Butter and Sugar

In a large bowl, cream the softened butter with the sugar mixture until light and fluffy.

  4. 4

    Add Eggs

Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  6. 6

    Bake Base

Pour the batter into a greased 9x13 inch baking pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  7. 7

    Cool Base

Once baked, remove from the oven and let it cool completely in the pan.

Filling Preparation

  1. 8

    Prepare Cream Cheese Mixture

In a large mixing bowl, beat the cream cheese with the powdered sugar until smooth and creamy.

  2. 9

    Add Lemon Juice

Stir in the lemon juice until well combined.

  3. 10

    Whip Heavy Cream

In a separate bowl, whip the heavy cream until stiff peaks form.

  4. 11

    Combine Mixtures

Gently fold the whipped cream into the cream cheese mixture until fully combined and smooth.

Assembly

  1. 12

    Layer Filling on Base

Once the cake base has cooled, spread the cream cheese filling evenly over the top.

  2. 13

    Chill

Cover the dish with plastic wrap and refrigerate for at least 2 hours to set.

  3. 14

    Prepare Topping

Just before serving, wash and slice the fresh berries. Optionally, tear mint leaves for garnish.

  4. 15

    Serve

Cut into squares, garnish with fresh berries and mint leaves, and dust with powdered sugar before serving.
