Method

Steak Preparation

  1. 1

    Prepare the Steak

Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes. This allows for even cooking.

  2. 2

    Season the Steak

Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.

  3. 3

    Heat the Pan

In a large skillet or grill pan, heat the olive oil over medium-high heat until it's shimmering.

  4. 4

    Cook the Steak

Place the steaks in the hot pan and sear for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness. Use tongs to flip the steaks.

Garlic Butter Preparation

  1. 5

    Melt the Butter

In a small saucepan, melt the unsalted butter over low heat.

  2. 6

    Add Garlic and Herbs

Mince the garlic cloves and add them to the melted butter. Cook until fragrant, about 1 minute. Then stir in the chopped parsley and lemon juice.

  3. 7

    Combine with Steak

Once the steaks are done, remove them from the pan and let them rest for 5 minutes. Drizzle the garlic butter over the steaks before serving.

Sides Preparation

  1. 8

    Prepare the Vegetables

Wash the asparagus and trim the ends. Wash the baby potatoes and halve them if they are large.

  2. 9

    Roast the Vegetables

In a mixing bowl, toss the asparagus and baby potatoes with olive oil, salt, and black pepper. Spread them out on a baking sheet.

  3. 10

    Bake

Roast the vegetables in the oven at 200°C (400°F) for about 20-25 minutes or until they are golden and tender, stirring halfway through.
