Prepare the Fries
Peel and cut the russet potatoes into thin shoestring fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Make the Pimento Cheese
In a mixing bowl, combine the shredded cheddar cheese, cream cheese, diced pimentos, garlic powder, onion powder, hot sauce, salt, and black pepper. Mix until well combined and creamy.

Assemble the Pimpin Fries
Place a generous portion of the crispy fries on a serving plate. Top with pimento cheese and sprinkle with chopped bacon. Serve immediately.
