    Make the Biscuit Dough

    Preheat your oven to 425°F (220°C). In a large bowl, whisk together the flour, baking powder, salt, and baking soda. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Do not overmix.

    Shape and Bake the Biscuits

    Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut out biscuits with a round cutter and place them on a baking sheet. Bake for 12-15 minutes or until golden brown.

    In a skillet over medium heat, cook the pork sausage patties until they are browned and cooked through, about 4-5 minutes per side. Remove and keep warm.

    In the same skillet, crack the eggs and cook them to your desired doneness (sunny side up, over easy, etc.). Season with black pepper.

    Slice the baked biscuits in half. On the bottom half, place a sausage patty, a slice of cheese, and a cooked egg. Top with the other half of the biscuit. Serve warm.
