    Peel the Russet potatoes and cut them into thin, shoestring-sized strips. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry using a clean kitchen towel or paper towels. Make sure they are as dry as possible to achieve maximum crispness.

    Heating the Oil

    In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
