In a saucepan, combine ripe tomatoes, brown sugar, apple cider vinegar, smoked paprika, and salt. Cook over medium heat until the mixture thickens, about 30 minutes. Blend until smooth and set aside.

Make Alabama White Sauce
In a bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, Dijon mustard, black pepper, and salt until well combined. Set aside.

Grill Chicken
Grill the chicken breast until fully cooked, about 6-7 minutes per side. Slice the grilled chicken into strips.

Assemble the Sandwich
On a hoagie roll, layer grilled chicken, pepperjack cheese, pickles, shredded red cabbage, a generous spoonful of smoked tomato jam, and drizzle with Alabama white sauce.

Place the assembled hoagies on a grill or sandwich press, grilling until the cheese melts and the bread is toasted, about 3-4 minutes.
