Cooking Quinoa

    Rinse Quinoa

    Place the quinoa in a fine-mesh strainer and rinse under cold running water for about 1-2 minutes to remove any bitterness.

    Cook Quinoa

    In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes.

Sautéing Vegetables

    Heat Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.

    Add Vegetables

    Stir in the diced bell pepper, zucchini, and halved cherry tomatoes. Cook for about 5-7 minutes until the vegetables are tender.
