Method
Preparing the Marinade and Pork

Make the Marinade
In a blender, combine garlic cloves, orange juice, lime juice, oregano, cumin, salt, and black pepper. Blend until smooth.

Marinate the Pork
Place the pork shoulder in a large bowl or resealable bag. Pour the marinade over the pork, ensuring it’s well coated. Seal and refrigerate for at least 8 hours, preferably overnight.
Roasting the Pork

Preheat Oven
Preheat your oven to 300°F (150°C).

Crisp the Skin
During the last 30 minutes of roasting, remove the foil to allow the skin to crisp up. Increase the oven temperature to 400°F (200°C) for this step.

Cook the Rice
In a saucepan, bring water to a boil. Add white rice and salt. Reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.
