    Prepare the Potatoes and Onions

    Peel and slice the potatoes into thin rounds. Finely chop the onion.

    Cook the Potatoes and Onions

    In a large skillet, heat the olive oil over medium heat. Add the sliced potatoes and chopped onions, and sprinkle with salt. Cook, stirring occasionally, for about 15-20 minutes, or until the potatoes are tender and lightly golden.

Cooking the Tortilla

    Beat the Eggs

    In a large bowl, crack the eggs and beat them with a fork until well mixed. Season with salt and black pepper.

    Combine Ingredients

    Once the potatoes and onions are cooked, drain the excess oil and add them to the bowl with the beaten eggs. Stir gently to combine.

    Cook the Tortilla

    Wipe the skillet clean and add a little olive oil. Heat over medium-high heat. Pour in the egg, potato, and onion mixture. Cook for about 5 minutes, or until the edges start to set.

    Flip the Tortilla

    Using a large plate, carefully invert the tortilla onto the plate. Slide it back into the skillet to cook the other side for another 5 minutes, or until it is fully set and golden brown.

    Once cooked, slide the tortilla onto a serving platter. Allow it to cool slightly before slicing into wedges. Serve warm or at room temperature.
