    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Add Garlic and Remaining Veggies

    Stir in the minced garlic, diced carrots, celery, red bell pepper, and zucchini. Cook for another 5-7 minutes, stirring occasionally until the vegetables soften.

Cooking the Soup

    Combine Beans and Broth

    Add the drained black beans, chickpeas, vegetable broth, and canned diced tomatoes (with their juice) to the pot. Stir well to combine.

    Season the Soup

    Sprinkle in the cumin, smoked paprika, salt, black pepper, and add the bay leaf. Stir again and bring the mixture to a boil.

    Simmer

    Once boiling, reduce the heat to low and let the soup simmer for 20-25 minutes, allowing the flavors to meld.

    Add Spinach

    In the last 5 minutes of cooking, add the chopped spinach to the soup. Stir until wilted.

Serving

    Garnish and Serve

    Remove the bay leaf and ladle the soup into bowls. Garnish with fresh cilantro and serve hot.
