For the Filet Mignon

    Prepare the Steaks

    Take the filet mignon steaks out of the refrigerator and let them come to room temperature for about 30 minutes.

    Season the Steaks

    Rub the steaks with olive oil, and season generously with salt, black pepper, and fresh rosemary on both sides.

    Preheat the Grill

    Preheat your grill to high heat, around 450°F (232°C).

    Grill the Steaks

    Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

    Rest the Steaks

    Remove the steaks from the grill and let them rest for 5-10 minutes before serving.

For the Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes into even-sized chunks. Place them in a large pot and cover with cold water.

    Add Garlic

    Add the garlic cloves (whole) to the pot with the potatoes.

    Boil the Potatoes

    Bring the water to a boil over high heat, then reduce to a simmer and cook until the potatoes are fork-tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and garlic, then return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

    Serve

    Serve the garlic mashed potatoes alongside the grilled filet mignon.
