Baking Base Layer

    Prepare the Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk them together to ensure even distribution.

    Combine Wet Ingredients

    In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter until well combined.

    Combine Mixtures

    Pour the wet mixture into the dry ingredients and stir with a spatula until just combined. Do not overmix; a few lumps are okay.

    Bake the Base Layer

    Pour the batter into the prepared cake pan and bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Cool the Base Layer

    Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Decorating the Cake

    Prepare the Frosting

    In a mixing bowl, combine the powdered sugar and cocoa powder. Gradually add the heavy cream and mix until you achieve a smooth, spreadable consistency.

    Color the Frosting

    Divide the frosting into two bowls. In one bowl, add blue food coloring and mix until well blended. In the other bowl, add red food coloring and mix until well combined.

    Frost the Base

    Once the cake has cooled completely, spread a layer of the chocolate frosting over the top of the cake.

    Decorate with Colors

    Using a piping bag or a spoon, add the blue and red frosting to create the Columbia Cafe logo design on top of the cake. Be creative and replicate your logo as best as you can.

    Let the decorated cake sit for about 10 minutes to allow the frosting to set before serving.
