    Prepare the Ingredients

    Gather and prepare all ingredients. Chop the onion, garlic, red bell pepper, and tomatoes. Clean the shrimp and mussels.

Cooking

    Sauté the Chicken

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the chicken thighs and season with salt and black pepper. Sauté until browned, about 5 minutes. Remove the chicken and set aside.

    Cook the Vegetables

    In the same pan, add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes. Stir in the diced tomatoes and cook for an additional 3 minutes.

    Add Rice and Broth

    Add the Bomba rice to the pan, stirring to coat with the oil and vegetables. Pour in the chicken broth and white wine, then add the saffron and smoked paprika. Bring to a boil.

    Simmer the Paella

    Reduce the heat to low and return the chicken to the pan. Cover and simmer for about 15 minutes, or until the rice is almost tender.

    Add Seafood

    Arrange the shrimp and mussels on top of the rice. Sprinkle the peas over the top. Cover and cook for another 5-7 minutes, or until the mussels open and the shrimp turn pink.

    Rest and Serve

    Remove from heat and let the paella rest for 5 minutes before serving. Garnish with fresh parsley if desired.
