Calamari Preparation

Prepare the Calamari
Start by cleaning and slicing the fresh calamari into rings. Make sure they are evenly cut for consistent cooking.

Mix the Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure that the spices are evenly distributed.

Coat the Calamari
Dip each calamari ring into the egg wash, allowing any excess to drip off, then dredge in the flour mixture until fully coated. Set aside on a plate.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

In a small bowl, combine the mayonnaise, minced garlic, lemon juice, and salt. Mix until well combined and creamy. Adjust seasoning to taste.
