In a blender, combine diced pineapple, fresh mint leaves, and grated ginger. Blend until smooth.

Using a fine mesh strainer or cheesecloth, strain the mixture into a pitcher to remove pulp. Press down to extract as much juice as possible.

Assembly

Mix the Drink

In a glass, mix 1/2 cup of the strained pineapple-mint-ginger juice with 1 cup of club soda and 1/2 tablespoon of lime juice. Taste and add simple syrup if desired.
