Prepare the Ginger Base

Peel and finely grate the fresh ginger root. In a saucepan, combine the ginger, sugar, water, and lemon juice. Bring to a boil over medium heat, stirring until the sugar is dissolved.

Simmer the Mixture

Once boiling, reduce the heat and let it simmer for about 30 minutes. This will extract the flavors of the ginger.

Cool and Ferment

After 30 minutes, remove the saucepan from heat and allow the mixture to cool to room temperature. Once cooled, sprinkle the active dry yeast over the mixture and stir gently. Cover the saucepan with a clean cloth and let it sit at room temperature for 24 hours to ferment.

Strain the Mixture

After 24 hours, strain the ginger mixture through a fine mesh sieve or cheesecloth into a clean container, discarding the solids.

Add Carbonation

Mix in the lemon zest and carbonated water into the strained ginger mixture. Stir gently to combine.

Pour the ginger beer into glasses filled with ice. Garnish with a slice of lemon if desired, and enjoy your refreshing non-alcoholic ginger beer!
