Preparing the Beef Tenderloin
Season the 6oz Prime Beef Tenderloin on both sides with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.

Preparing the Lobster Tail
Using kitchen scissors, cut the top shell of the cold water lobster tail lengthwise. Gently pull the meat out and place it on top of the shell. Brush with olive oil and season with salt and pepper.

Cooking the Lobster Tail
Preheat the oven to 400°F (200°C). Place the lobster tail on a baking sheet and bake for 12-15 minutes, until the meat is opaque and cooked through.

Preparing Seasonal Vegetables
Steam or sauté 2 cups of seasonal vegetables (like asparagus, green beans, or carrots) until tender. Season with salt and pepper.

Plating
On a plate, place the roasted garlic mashed potatoes, the sautéed seasonal vegetables, and the rested beef tenderloin. Add the lobster tail to the side. Drizzle with rosemary demi glace and top with compound herb butter.
