Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with paper towels.
Bread the Shrimp
Dip each shrimp first into the flour, shaking off any excess. Then dip into the beaten eggs, followed by coating with the coconut mixture, pressing gently to ensure the coconut adheres well.
Heat Oil
In a large skillet or deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread; it should sizzle and turn golden.
Fry the Shrimp
Carefully add breaded shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes per side.
Drain and Serve
Once cooked, transfer shrimp to a plate lined with paper towels to drain excess oil. Serve hot with sweet chili sauce on the side.
