For Grilled or Blackened Shrimp
In a bowl, combine olive oil, garlic powder, paprika, cayenne pepper, salt, and black pepper to create a marinade. Add the shrimp and toss until well-coated. For grilled shrimp, preheat the grill to medium-high heat and thread shrimp onto skewers. Grill for 2-3 minutes per side until opaque and cooked through. For blackened shrimp, heat a skillet on high heat, add a bit of oil, and cook shrimp for 2-3 minutes per side until blackened and cooked through.

For Coconut Crusted Shrimp
Preheat the oven to 400°F (200°C). Dip each shrimp in the beaten egg, then coat with shredded coconut. Place on a baking sheet lined with parchment paper and bake for 12-15 minutes until golden brown and crispy.

Prepare Coconut Rice
In a saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a boil over medium heat. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed. Fluff with a fork before serving.
