Prepare the sausage mixture
In a large mixing bowl, combine the ground pork, garlic powder, onion powder, salt, black pepper, paprika, red pepper flakes, and chopped fresh herbs. Mix well until all ingredients are evenly combined.

Stuff the sausages (optional)
If using natural sausage casings, rinse them under cold water and soak them in water for 30 minutes. Using a sausage stuffer, carefully fill the casings with the sausage mixture, making sure to avoid air pockets. Tie off the ends of the casings with kitchen twine.

Shape the sausage links
If not using casings, simply shape the sausage mixture into small links or patties, about 2-3 inches long.

Heat the oil
In a large skillet, heat the olive oil over medium heat until shimmering.

Cook the sausage links
Add the sausage links to the skillet in a single layer. Cook for about 8-10 minutes, turning occasionally, until they are browned and cooked through (internal temperature should reach 160°F or 71°C).

Remove the sausage links from the skillet and let them rest for a few minutes before serving. Enjoy them with your favorite sides or condiments.
