Sandwich Preparation

Prepare the batter
In a large bowl, whisk together the all-purpose flour, milk, eggs, salt, and black pepper until smooth.

Assemble the sandwich
Take two slices of Texas toast. Layer each with 4 slices of tavern ham and 2 slices of gruyere cheese. Top each with another slice of Texas toast to form a sandwich.

Dunk in batter
Dip each assembled sandwich into the batter, ensuring they are well coated.

Fry the sandwiches
In a large skillet or frying pan, heat oil over medium heat. Once hot, add the battered sandwiches and cook until golden brown, about 4-5 minutes per side.

Beurre Blanc Sauce Preparation

Prepare shallots
Finely chop the shallots.

Cook shallots
In a small saucepan, combine the chopped shallots and white wine. Bring to a simmer over medium heat and cook until reduced by half.

Add cream and butter
Stir in the heavy cream and slowly whisk in the butter until the sauce is smooth and creamy. Season with salt and white pepper to taste.
French Fries Preparation

Prepare the potatoes
Peel and cut the potatoes into thin strips to make fries.

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

Carefully add the potato strips to the hot oil and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
