Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into even-sized sticks, about 1/4 inch thick. Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the potatoes and spread them out on a clean kitchen towel or paper towels. Pat them dry thoroughly to remove any moisture.

Heat the Oil
In a deep pot or a deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature for best results.

Fry the Potatoes (First Batch)
Carefully add a handful of the dried potato sticks to the hot oil. Fry for 4-5 minutes until they are soft but not browned. Remove with a slotted spoon and drain on paper towels.

Fry the Potatoes (Second Batch)
Increase the oil temperature to 375°F (190°C). Return the first batch of fries to the oil and fry for another 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika. Toss to coat evenly.

If desired, chop fresh parsley and sprinkle over the fries for a fresh touch before serving.
