In a small bowl, combine warm milk (110°F), sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough Ingredients
In a large mixing bowl, combine flour and salt. Once the yeast is activated, add it to the flour mixture along with melted butter and eggs. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Place it in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.

In a medium bowl, mix together brown sugar, ground cinnamon, and softened butter until well combined.
Assembly and Baking

Roll Out Dough
Once risen, punch down the dough and roll it out into a rectangle (about 16x24 inches) on a floured surface.

Spread the filling mixture evenly over the rolled-out dough.

Form Rolls
Starting from one edge, tightly roll the dough into a log. Cut into 12 equal rolls and place them in a greased baking dish.

Cover the rolls and let them rise for another 30-45 minutes until puffy.

Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes until golden brown.
Frosting Preparation

In a mixing bowl, beat together cream cheese, powdered sugar, pineapple juice, and coconut extract until smooth and creamy.

Fold in shredded coconut until evenly distributed.

Once the rolls have cooled slightly, spread the coconut pineapple frosting generously over the top.
