Method

Chicken Skewers

  1. 1

    Marinate the Chicken

Cut the chicken breast into 1-inch cubes and place them in a bowl. Pour 1 cup of teriyaki sauce over the chicken, ensuring it is well coated. Cover and refrigerate for at least 30 minutes to marinate.

  2. 2

    Prepare the Vegetables

While the chicken is marinating, chop the red and yellow bell peppers and red onion into 1-inch pieces.

  3. 3

    Assemble the Skewers

After marinating, thread the chicken, bell peppers, and red onion alternately onto the wooden skewers.

  4. 4

    Grill the Skewers

Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Pineapple Salsa

  1. 5

    Prepare the Salsa

While the chicken is grilling, finely chop the fresh pineapple and red onion. In a bowl, combine the chopped pineapple, red onion, and cilantro.

  2. 6

    Season the Salsa

Squeeze the juice of one lime over the salsa mixture and add 1 tsp of salt. Mix well and let sit for a few minutes for the flavors to meld.
