Burger Components

    Prepare the Burger Patties

    Form the ground beef into four equal patties and season with salt and pepper.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 3-4 minutes on each side for medium doneness. In the last minute of cooking, place a slice of Havarti cheese on each patty to melt.

    Prepare the Tomato and Lettuce

    Slice the heirloom beefsteak tomato into thick slices and wash the butter lettuce leaves.

Bacon Jam

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels, leaving some bacon fat in the skillet.

    Make the Jam

    Add the chopped onion to the skillet and sauté until softened. Stir in the brown sugar, apple cider vinegar, and black pepper. Cook until the mixture thickens and becomes jam-like, about 10-15 minutes. Stir in the crumbled bacon.

Garlic Herb Mayo

    Mix the Mayo

    In a bowl, combine mayonnaise, minced garlic, chopped parsley, and lemon juice. Mix well and set aside.

Crispy Onion Strings

    Soak the Onions

    Soak the thinly sliced onion in buttermilk for at least 30 minutes.

    Prepare the Batter

    In a bowl, combine flour, cornstarch, salt, and black pepper. Dredge the soaked onions in the mixture.

    Fry the Onions

    Heat oil in a deep pot. Fry the onions in batches until golden and crispy, about 2-3 minutes per batch. Drain on paper towels.

    Peel and cut the russet potatoes into thin strips.

    Heat oil in a deep pot. Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

Assemble the Burger

    Build the Burger

    On the bottom half of each brioche bun, spread garlic herb mayo. Add the burger patty with melted Havarti cheese, followed by a spoonful of bacon jam, some crispy onion strings, and a leaf of butter lettuce. Top with a slice of heirloom tomato and the other half of the bun.
