Prepare the Short Ribs
Season the beef short ribs with salt and black pepper on all sides.

Sear the Ribs
In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

Add Broth and Herbs
Add beef broth, rosemary, and bay leaves. Return the seared short ribs to the pot.

Cover and cook in a preheated oven at 250°F (121°C) for 72 hours, or use a sous-vide method, ensuring the ribs are submerged fully.

Soak the thinly sliced onion in buttermilk for at least 30 minutes.

Prepare the Breading
In a bowl, combine all-purpose flour, cornstarch, salt, and black pepper.

In a deep frying pan, heat vegetable oil over medium-high heat until shimmering.

Remove onions from buttermilk, let excess drip off, and coat in the flour mixture. Fry in batches until golden brown, about 2-3 minutes. Drain on paper towels.

Add roasted garlic cloves to the pot and drain the potatoes.
