    Pickle the Red Onions

    In a small saucepan, combine vinegar, sugar, and a pinch of salt. Heat until sugar dissolves. Pour over thinly sliced red onions in a bowl. Let sit for at least 30 minutes.

    Prepare the Maitre d’ Butter

    In a mixing bowl, combine softened butter, minced garlic, chopped parsley, chives, and rosemary. Mix well and form into a log. Wrap in plastic wrap and refrigerate until firm.

    Cook the Frites

    Preheat the oven to 425°F (220°C). Toss cut potatoes with olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes until golden and crispy, turning halfway through.

    Grill the Steak

    Season hanger steak with salt and pepper. Preheat grill or grill pan over medium-high heat. Grill steak for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes.

    Serve

    Slice the steak against the grain. Serve on a plate with rosemary frites, a dollop of maitre d’ butter on top, fresh arugula, and pickled red onions on the side.
